Flap Jack

Ingreidents

  • Dairy Free Margarine 250g | 1 cup + 2 tbsp    Whats the best Dairy Free Butter (in my opinion)?

  • Light Soft Brown Sugar 225g | 1 cup

  • Golden Syrup 3 tbsp (If you’re watching your sugar, use 2 tbsp, but 3-4 tbsp really boosts the flavor)

  • Gluten Free Oats 400g | 4 Cups

  • Optional Extras

  • Raisons

Instructions

  1. Preheat your oven to 150°C (302°F) and line your baking tray.

  2. Place the sugar and butter in a bowl, with the butter on top of the sugar. This way, less butter and sugar will stick to the sides of the bowl.

  4. In a pan over medium heat, combine the butter, sugar, and golden syrup. Stir the mixture until everything is melted and smooth. Adding the golden syrup directly to the pan helps prevent it from sticking to the bowl.

  6. Once the mixture is melted, measure and add the oats, stirring until they are well coated. Then, mix in a few handfuls of raisins.

  8. Give the mixture one last stir in the pan, then transfer it to the lined baking tray. Press down firmly to make it compact. Bake in the preheated oven for 38-40 minutes, or until the top is golden brown. It might seem a bit soft when you take it out, but it will firm up as it cools.

  10. Let it cool for 10-15 minutes, then enjoy! If it’s still a bit soft, wait until it cools completely, then refrigerate it. Chilling in the fridge helps it firm up more and enhances the flavor, making the golden syrup set perfectly.

  12. After it’s been in the fridge for a while, enjoy your delicious flapjacks!
