    Crêpe


  • Mixed G.F Flour (Buckweet 50g and Chickpeak 50g) 100g | 3/4 Cups    What's the best flour in my opinion?

  • Salt 1 Pinch

  • Eggs 2

  • Sunflower Oil

  • Salt

  • Oat / Alternative Milk 250ml | 1 Cup

  • Filling's


  • Mushrooms 100g | 1 Cup

  • Handful Spinnich

  • Vegan Cheese Slices

  • Olive Oil

  • Garlic Clover

Instructions

  1. Start by sifting the flour into a large mixing bowl to remove any lumps. Once sifted, create a well in the center of the flour. This is where you'll add your wet ingredients. Crack the eggs directly into the well and sadd salt, ready for mixing.

  3. In a separate jug, measure out the milk. Gradually pour the milk into the well with the eggs, while gently whisking. Slowly incorporate the flour from the edges, whisking continuously until you have a smooth, lump-free batter.

  5. In a separate pan, heat a drizzle of olive oil over medium heat. Add the mushrooms and cook until they become golden and tender, about 5-7 minutes. Once the mushrooms are cooked, add the spinach and garlic to the pan. Stir for another 2-3 minutes until the spinach wilts down. Season with salt and pepper to taste.

  7. Heat a non-stick pan over medium heat until it's nice and hot. Lightly grease the pan with a small amount of oil or butter. Pour a ladle of the crepe batter into the pan, swirling it around quickly to cover the surface in a thin layer. Pour out any excess batter back into the bowl, as you want the crepes to be thin. When you start to see small air bubbles forming and the edges begin to lift slightly, it's time to flip the crepe. If the underside is golden, you flipped it at the perfect time!
